Vegan Lactation Cookies

eta:  some weird flick message is covering up this recipe, just double posting it so you can read it I can't figure out why the flickr message is there or how to get rid of it :(

Dairy Free Lactation Cookies

Ingredients:

  • 3/4c Coconut Oil
  • 1c Brown Sugar
  • 2-4 tbs Blackstrap Molasses
  • 3 tbs Flax seed meal
  • 4 tbs water
  • 2/3c Pumpkin Puree
  • 1 tsp Vanilla Extract
  • 2c Whole Wheat Flour
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2-4 tbs brewers yeast
  • 3c Rolled Oats
  • 1 cup Vegan Chocolate Chips
  • optional: toasted pumpkin seeds
Directions:

  1. Preheat oven to 350
  2. Mix the flaxseed meal and water and let sit for 3-5 mins
  3. Beat Coconut Oil, Brown Sugar and Blackstrap Molasses
  4. Add Pumpkin puree and mix well
  5. Add flaxseed mix, vanilla extract, mix well
  6. Sift together flour, brewers yeast, baking soda and salt
  7. Add dry ingredients to Coconut mix
  8. Stir in Oats and Chocolate Chips (optional to use dark chocolate chips, non vegan but yummy)
  9. optional: stir in pumpkin seeds
  10. Scoop on a baking sheet with ice cream scoop
  11. press on cookies to flatten a little bit (cookies will keep same shape after baking)
  12. Bake for 12-15 minutes
  13. transfer to rack to cool
  14. Enjoy!
Even if they don't boost your milk supply they are super yummy and healthy!
